Tilapia Bananas Foster

You’ll Need:
Four Tilapia Fillets
Sea Salt
Granulated Garlic
Ground Cumin
2 tbs or so of Coconut Oil

6 Ripe Bananas (fresh or Frozen) - Sliced
1 - 2 Tbs. Vanilla
Margarine
Dash of Cardamom
½ tsp. Cinnamon
½ tsp. Nutmeg
¼ tsp. lemon juice
½ cup Amoretto
1/3 cup Pure Maple Syrup

OK, I know this sounds like a weird recipe, but trust me your taste buds and your family will be thanking you.

First, heat a sauté pan on medium high heat. Add the coconut oil. Meanwhile take your tilapia fillets and dust both side nicely with sea salt, granulated garlic and ground cumin. When the oil is hot. Sear the fillets. Make sure you allow a nice crust to form on both sides. Tilapia cooks fairly quickly, so if your oil is hot, the fish should be soft and moist on the inside with a well developed seared crust on the outside. 

Once done, put the fillets on a serving plate. Now, wash out the pan and put it back on the fire, this time on medium to medium low heat. Add enough margarine to coat the bottom of the pan. Then add the bananas. Let them soften and heat up for about 3 minutes, then slowly add the other ingredients one at a time, reserving the Amoretto and Maple syrup for last. Once the banana are soft and all the ingredients have mixed well, turn the heat up, and add the amoretto. You can burn the alcohol off with a flame. Then add the Maple Syrup. Keep the bananas moving as the amoretto and the syrup will start to caramelize. 

Once done, remove the bananas to another serving bowl. Serve the tilapia hot with some of the bananas foster on top. Trust me. Reserve some of the bananas foster as a dessert for after the meal and serve them warm over vanilla ice cream.
